How to Make a Basic Sponge Cake

In this post I will show you how to make a basic sponge cake which I will refer to in future posts.

Sponge cake is one of those cakes that could be served in many ways, and tastes great on its own, or coated with butter-cream and other treats.

There are many recipes for making sponge cake out there on the internet, but I have found that this one creates a perfect, soft and sponge cake every time!

  • 350g/12oz butter or margarine
  • 350g/120z caster sugar (super fine)
  • 6 eggs
  • 350g self-raising flour
  • 1 tsp vanilla extract (optional)


  1.  Pre-heat oven to 160°C/325°F/Gas Mark 3 and cream together butter and sugar till light and fluffy.

  2. Crack the eggs into the bowl, adding a spoon of flower after each egg. Add 1 tsp of vanilla extract and mix.

  3. Grease a pan with butter or margarine or line it with grease proof paper. Place in preheated oven and bake for an hour. You can check if the cake is ready by inserting a knife and making sure that it comes out clean.

  4. And that’s all there is to it! You have your perfect sponge cake. Now you can decorate it with butter cream, or serve it plain with tea! You are only limited by your imagination! 🙂

How to Make Cake Pops

Cake pops are great treats, kids and adults both love them and they are extremely fun and easy to make! They could be used for all sorts of occasions, birthday parties, weddings, pretty much anything!

Cake pops were originally made by Bakerella, they can now be found in Starbucks and many bakeries.

Here is my step by step guide on how to make cake pops! 🙂

What you will need:

  • Cake Frosting
  • Melted chocolate
  • Toothpick skewers
  • Styrofoam or a baking tray with grease proof paper or something to hold toothpicks up
  • Cake Pop Molds (optional)


  1. Place cake in food processor to make fine crumbs. This can also be done by hand but I prefer to use a food processor to create a more even texture.

  2. Add enough frosting to make the mixture smooth, pliable and able to hold its shape.

  3. Make round balls or use a cake pop mold to shape. Place in fridge till firm.

  4. Melt chocolate in microwave or use the double boiler method. Dip the cake pops into the molten chocolate.

  5. Gently tap cake pop to remove any excess chocolate and let it stand in Styrofoam or place on a grease proof paper and let dry.

  6. I decorated the cake pops using a cone with melted chocolate.

  7. And that’s all there is to it! Easy, right? It takes some practice, but keep trying! Here are the finished cake pops:
